Pineapple Bacon Cheese Burger


This burger has become so popular in our house we can’t make them enough.  My husband said if he could only have one kind of burger this would be it.

Normally we like some kind of chip with burgers, but every time we’ve eaten this meal neither of us have dipped into any crisps.  Perhaps it’s because we’re too busy grunting over the mouthwatering taste to notice anything else on the table.

There are three key “musts” in making this special slider.  Always select name brand pineapple.  Off brands really don’t pack the flavor punch and will taste watery.

Second, the bread or roll has to be great.  Regular rolls or bread take away from the overall experience.  A seeded bread or roll adds that special crunch.

Lastly, the pineapple and bread/roll have to be grilled!  It really does make a difference in the taste and in melting the cheese ever so gently.

My Pineapple Bacon Cheese Burger is bursting with flavor in every bite. There’s sweet, tangy, spicy and savory.  Another thing I love about these burgers is that they taste great cold the next day.  Make a few extra (totally put them together as if you were eating it then place in plastic wrap in the refrigerator) and you’ll see what I mean.

If you want people to remember your cook-outs or barbecues, try making these for your guests or on National Cheeseburger Day which is September 18th.  Whether you’re a vegetarian or not I hope it will become a Favored Cooking recipe in your home as well. 

Items You Will Need: A grill (we use a Foreman Grill), Microwave
Cooking Items: spoon, knife

Cook Time
Prep: 10 minutes
Total Time: Approx. 20-30 minutes
Serves: 2 or more

Ingredients

French Bread or Rolls with Sesame Seeds
1 can Dole Sliced Pineapple in 100% pineapple juice
Sliced Cheese (we use Land O Lakes American)
Morning Star Garden Vegetarian Burgers
93% Lean Ground Beef Burger for meat eaters
4 - 8 slices of Morning Star Vegetarian Bacon Strips
Fresh Lettuce (washed and dried)
Honey Mustard Sauce (your choice of brand)

Let’s Make It

Make sure your grill is hot.  I didn’t use cooking spray on mine and it worked fine.


1.    Place the rolls or bread on the grill. If you’re using a Foreman close it so both sides get that brown crisp grill mark.
2.    Remove rolls/bread from grill and place it on a serving plate or dish.
3.    Put the pineapple slices on the grill.  Close the Foreman.  After the bottom of the pineapple is browned flip it and do the same on the other side.
4.    At the same time cook the burgers on the grill or in the microwave.  See cooking note below.
5.    Spread a generous amount of honey mustard on the warm bread.
6.    Layer with lettuce, bacon, burger, pineapple and cheese.
7.    Get ready to grunt in satisfaction as you dig in to this big burger!


Cooking the meat: 

Cook the vegetarian bacon according to the package.  Cook the vegetarian burgers according to the package less 30 seconds because it will get hard on the grill.

If you are using meat, you can cook it on the grill or in the microwave oven.  For microwave cooking, put burger in a paper bowl with a paper towel over it to prevent splattering.  Cook on high for one minute.  Drain it then flip the burger.  Finish cooking about 45 seconds to one minute or until the pink is gone.

Notes: Sour dough or rye bread are also good, but plain hamburger rolls or bread ... that "ain't" right!  Stick with a hearty bread if you can.

Savory Butternut Squash Soup Recipe

Butternut squash recipes are really for any time of the year, but why not have some fun by celebrating National Homemade Soup Day on February 4th? 

I’m not really a squash fan, but when it comes to butternut squash – I’m in love!  As a vegetarian I enjoy eating butternut squash on a regular basis instead of potatoes to improve health and maintain blood sugar levels.  They also provide the benefits and good source of vitamins such as A, C, iron and riboflavin. 
Another thing that is a perk for using squash in your recipes is that it can be stored for long periods of time (up to 3-4 weeks).  Usually we just let ours sit on the counter or in a cool dry place. 
 
Winter squashes are best purchased in the early fall (acorn, spaghetti or butternut squash).  Look for the flesh to be a flat, not shiny in appearance without any cracks, soft spots or blemishes.  The smaller sizes have a sweeter taste so keep that in mind depending on the recipe. 
 
Great soups begin with great ingredients wouldn’t you agree? Try a new twist on regular boring soups. Add pears, apples or cinnamon and give your soup a healthy boost. Just a hint of sage or ginger can really bring out the best in any soup recipe.

Kitchen supplies: skillet, spoon, knife, measuring cup, microwave safe bowl, blender

Yields: 4
 
Ingredients:

1 large red apple cubed

1 whole peeled - seeded- and cooked squash

1 tablespoon olive oil

1/2 small peeled onion (optional)

1 clove of garlic peeled (optional)

1/2 teaspoon of thyme

2 cups vegetable stock

1/4 teaspoon of cinnamon

sea salt and ground pepper (to taste)
 

Instructions:

Recipe calls for the use of a Health Master or other food cooking blenders/food processors. 

How to cook the squash:

We have tried just putting the ingredients in the blender, but it doesn't get done enough and the squash is still somewhat raw. This is what we suggest for this recipe that works for us. 

Step 1: Wash squash before you cut it. Peel, remove seeds and cube butternut squash. Rinse the squash again. (Please view the video on how to cut squash safely.) Place in large microwave safe bowl and cover. Cook on high for 15 minutes or until soft (mashable). 

Step 2: In the meantime, combine the apple, onion, garlic, and thyme with the olive oil in a saucepan cooking for about 3-5 minutes.

Step 3: Add vegetable stock, squash and sautéed mixture to the blender. Put on the lid. Turn on speed 8 for 8 minutes if you are using the Health Master Blender. If using another blender, pulse it until the desired texture is achieved, and then re-heat. Spoon into bowls and add apple or other garnish if desired. 

Enjoy!

Cuisinart 2-Slice Metal Classic Toaster

on the countertop. It still looks brand new.
The Best Toaster I've Ever Owned ~ Cuisinart

Somewhere along the way I must have mentioned to my oldest sister that our toaster was on its last days. Being the good soul that she is, she stored the information in her memory bank and surprised us with this brand new Cuisinart 2 slice toaster for Christmas.

Since breakfast is my favorite meal, having a good toaster is a mainstay around our home. Not only do I use a toaster for ordinary toast needs, but I like to use it for a variety of sandwiches that I like. When my husband opened the package we noticed all the wonderful things that this small kitchen appliance could do. 

Why I like this product. 


If you'll notice, this particular Cuisinart toaster has 2 slots, but it also comes in a 4 slot as well. I love the classic design of stainless steel, because to me it looks so clean and bright. Take note that the exterior has no sharp edges either, but a sleek, smooth appearance.

Bagels are another bread item that we eat a lot of in my home, and I never had a toaster that could handle one. If I used a toaster for it, the thing would always get stuck because it wasn't made to do bagels. Well, besides regular bread this toaster is set up to take bagels, French bread, Texas toast or waffles because it has slots 1 and a 1/2 inches wide.

There are four settings: bagel like I mentioned, defrost (love that), reheat (warm your toast without toasting it again) and cancel. The control lifter is larger and heavy duty making it easy to manipulate. You'll like this also, there is a dial number setting that lets you select the shade control of your toast. One of my sisters likes her toast almost burnt, I like a darker toast, but my husband prefers a rather light toast. Perfect!

Clean-up is another thing that makes this a better toaster ... there's hardly any! It comes with a slide out crumb tray that can easily be whipped out keeping it looking classy on any countertop. It comes with a 3 year warranty.

I don't know what you look for in a toaster, but this one has it over some of the other name brands. Right now this item is on sale at a great price.
